Stay Cool With Smokey Pulled Pork Tacos

There’s no need to break a sweat making a fancy feast just to feed your family. Now you and your kitchen can stay cool no matter the weather. This simple slow cooker recipe requires minimal effort, yet yields maximum flavor and plenty of healthy leftovers. With a little help from your “crock pot,” it’s easy to spice up your plate with this metabolic-boosting, mouth-watering, high-protein, low-carb, nutrient-dense Summer dish. Although best limited for weight loss, sprouted corn tortillas can be served as a healthier alternative to processed, insulin-spiking flour tortillas.

SMOKEY SLOW COOKED PULLED PORK TACOS

Prep: 10 minutes  Cooking: 8 hours  Pork Serves: 12  Toppings Serve: 4
SLOW COOKER INGREDIENTS
3 1/2 LB Pork shoulder or butt, cut in half horizontally 
1 TSP Cayenne powder
2 TSP Chili powder
1 TB Liquid smoke
1/4 Cup Water
TOPPINGS
6 Scallions, chopped finely
1 Cup Cilantro, chopped
1 Lime, juiced
1 Cup Guacamole
1/2 Cup Tomato salsa
6 Leaves Romaine lettuce

INSTRUCTIONS
Add pork to slow cooker & rub with spices. Next, add liquid smoke & water, cooking on low for 8 hours. After 8 hours, the texture should be flaky & tear apart easily (if not, cook longer).
Remove pork from cooker, cover & let rest for 15 minutes while preparing the “toppings.” Next, return the pork to the slow cooker & use two forks to the shred meat in the remaining juices. Season, add “toppings” & serving wrapped in lettuce. See recipe below for serving leftovers.

PULLED PORK SALAD WITH GUACAMOLE & SALSA

Prep: 5 minutes Serves 2
INGREDIENTS
4 Cups Romaine lettuce, shredded
2 TSP Extra virgin olive oil
1 TB Apple cider vinegar
2 TB Zukay (optional) Red Pepper Cilantro Dressing
1/2 LB Slow Cooked Pulled Pork
1/2 Cup Guacamole
1/2 Cup Tomato salsa

INSTRUCTIONS
In a large bowl, add romaine, oil, vinegar & Zukay. Toss to combine until each piece of lettuce is coated with dressing. Divide salad mixture onto two plates. Top with Pulled Pork, guacamole & salsa.
