The Weston A. Price Foundation is non-profit organization dedicated to “restoring nutrient-dense foods to the American diet through education, research and activism.” With over 1,200 participants and an action-packed schedule at the conference this year, I had an amazing time meeting fellow nutrition nerds, making connections with vendors, listening to phenomenal speakers and eating unbelievably good food. Although it’s difficult to choose, some of my favorite dishes served at the conference include the True Pasture Beef Meat Loaf, Wildly Fermented Brassica, the gluten-free bread with Organic Pastures Butter and the Cheesecake with Dates and Soaked Almonds and the High Country Kombucha.
Takeaways From the 2015 Weston A. Price Conference
Quality animal fats is where it’s at. Grass-fed raw butter/cheese/milk/cream, free-range eggs, pastured beef fat (tallow), pastured pork fat (lard, bacon), wild salmon, fermented cod liver oil, etc. These healthy fats are crucial for getting enough fat-soluble vitamins (A, D, E and K) and essential fatty acids. 4. Fermented Foods
Fermented foods are some of the most nutrient-packed foods on the planet. Fermented veggies, such as sauerkraut, are the best sources of immune-boosting vitamin C. Fermented foods are a great source of probiotics or “good” bacteria that increase nutrient absorption, improve digestion, support detoxification, increase immunity and balance hormones. Good flora removes toxins, especially excess estrogens, which is helpful for preventing estrogen-dominant cancers. For maximum health benefits, include a little bit of fermented foods (kraut, kvass, kim chi, yogurt, kefir, pickles, etc.) at every meal, or at least one serving daily. 5. Organ Meats
Organic meats are nutrient powerhouses. Find ways to include organ meats regularly, even you if don’t like the taste of them, by hiding them in meatloaf, meatballs, and pâté. You can also get them pre-cooked and ready to enjoy in the form of Beef Braunschweiger, Beef Head Cheese, and Beef Liverwurst. Enjoy with raw milk cheese and crackers.
